Barley water, known as “agua de cebada” or “aigua civà,” is a traditional Valencian beverage that is both cherished in some regions and relatively unknown in others. This classic drink, particularly enjoyed as a granizado (a slushy version) during the hot summer months, offers a delightful contrast to popular beverages such as horchata and lemonade.

Historically, barley water was a staple in southern Valencia and northern Murcia, even reaching Madrid’s cafés in the 17th and 18th centuries before the advent of modern soft drinks. The preparation of barley water involves boiling water with barley and lemon peel, then adding sugar and allowing it to cool. Some variations also include cinnamon for added flavor.

At Horchatería Daniel in Valencia, barley water has been a staple for 75 years. Anna Del Vando, the communication manager, notes that despite its lower popularity compared to horchata, barley water has a dedicated following. The establishment offers various servings: plain granizado, a mix with horchata known as “sospir,” and a combination of barley water and lemon granizado.

Granizados Monzó, which markets barley water in supermarkets, positions it as a natural alternative to decaffeinated coffee. They infuse it with chicory before freezing, catering to consumers looking for a healthier option. José Monzó recalls how his grandmother used to prepare malt in the 1960s, using it as a coffee substitute, reflecting its historical role as an accessible and comforting drink.

Health Benefits of Barley Water

Beyond its nostalgic value, barley water boasts several health benefits. Traditionally used as a remedy for intestinal issues, it is rich in essential nutrients, including fiber, iodine, zinc, manganese, copper, chromium, and selenium. It also provides vitamins E and B-complex, such as thiamine and niacin, making it a nutritious choice for those seeking a natural beverage.

Barley water is more than just a refreshing summer drink; it represents a piece of Valencian heritage with significant health benefits. Its versatility and natural composition make it an appealing alternative to caffeinated and sugary beverages. As more people seek out healthier, traditional options, barley water’s role in modern diets is likely to grow.
